1 Large saucepan
1 Basting brush
1 Grill or oven
- 3 whole chickens halved
- 1 pound margarine
- 2 tablespoons mustard
- 20 ounces Durkee's Famous Sauce two 10 oz jars
- ¾ cup vinegar
- 2 tablespoons sugar
- 1 quart water adjust as needed
- Salt and pepper to taste
In a large saucepan, melt the margarine over medium heat.
Add Durkee's Famous Sauce and mustard to the melted margarine, using a little water to blend until smooth.
Stir in the vinegar, sugar, salt, and pepper. Adjust the water quantity to achieve a slightly thickened sauce consistency.
Allow the sauce to simmer gently for a few minutes, then remove from heat and let it cool to room temperature.
Preheat your grill or oven to medium heat.
Season the chicken halves with salt and pepper.
Place the chicken on the grill or in the oven, skin side down, and cook until browned on both sides.
Once browned, dip each chicken piece into the prepared sauce, ensuring thorough coating.
Return the coated chicken to the grill or oven and continue cooking until the internal temperature reaches 165°F (74°C), basting occasionally with additional sauce.
Remove from heat and let the chicken rest for a few minutes before serving.
📌 Storage: Store leftover Durkee Chicken in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months, ensuring the chicken is tightly wrapped to prevent freezer burn. Reheat in the oven or on the stovetop to maintain its texture and flavor.
📌 Flavor Variations: Customize the sauce by adding honey for a sweeter twist, cayenne pepper for extra heat, or Worcestershire sauce for deeper umami flavors. You can also sprinkle shredded cheese over the chicken in the last few minutes of baking for a creamy, melty finish.
📌 Pairing Suggestions: Serve Durkee Chicken with buttered rice, roasted vegetables, or a fresh garden salad for a well-balanced meal. For a heartier option, pair with mashed potatoes, cornbread, or grilled corn on the cob to complement the dish’s bold flavors.
📌 Meal Prep & Leftovers: This dish is great for meal prep, as the flavors intensify after a day in the fridge. Shred leftover chicken and use it in sandwiches, wraps, or pasta dishes, or mix it with extra sauce for a delicious barbecue-style chicken bowl.
