For the Cheetos Base:
- 2 cups cornmeal
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup water adjust as needed
- Oil for frying canola or peanut oil
For the Seasoning:
- 2 tbsp powdered cheddar cheese
- 1-2 tbsp Flamin’ Hot seasoning adjust to taste
- 1 tbsp dill pickle seasoning
- 1/2 tsp vinegar powder or citric acid
Mix Dry Ingredients: In a large bowl, combine cornmeal, flour, baking powder, powdered cheddar cheese, Flamin’ Hot seasoning, and dill pickle seasoning. Mix well.
Form the Dough: Gradually add water, stirring continuously, until the dough is firm but pliable.
Shape the Cheetos: Roll small portions of the dough into thin, irregular logs to resemble traditional Cheetos.
Fry Until Crispy: Heat oil to 350°F (175°C) and fry in small batches for 3-5 minutes until golden and crispy.
Drain & Season: Remove from oil, place on a wire rack or paper towels, and sprinkle extra Flamin’ Hot seasoning and dill pickle seasoning while warm.
Cool & Enjoy: Let the Cheetos cool completely before eating to allow the flavors to meld and crisp up further.
