Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 cups old-fashioned oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in oats, chocolate chips, shredded coconut, and chopped pecans.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until edges are golden brown.
  • Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Serve and enjoy!

Notes

📌For a chewier texture, slightly underbake the cookies and let them finish setting on the baking sheet.
📌You can substitute walnuts for pecans if preferred.
📌 Store in an airtight container for up to a week.
