Description

A foolproof method for roasting Frieda’s white boiler onions to caramelized, golden perfection. Ideal as a side dish for dinner or an elegant addition to holiday meals. This tested recipe delivers sweet, savory flavor with minimal ingredients and one pan.

Ingredients

Scale
  • 1 lb Frieda’s white boiler onions
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: 1 tsp fresh thyme or rosemary
  • Optional: 1 tbsp balsamic vinegar (for finishing)

Instructions

Prep the onions: Trim the ends and blanch onions in boiling water for 2 minutes. Transfer to an ice bath, then peel.

Season: Toss onions with olive oil, salt, pepper, and herbs (if using).

Roast: Spread on a baking sheet in a single layer. Roast at 400°F (200°C) for 30–40 minutes, tossing halfway, until golden and tender.

Finish: Drizzle with balsamic vinegar before serving, if desired.

Notes

  • Blanching helps peel the onions quickly.
  • For stovetop cooking, sear in a skillet until browned, then cover and simmer until tender.
  • Leftovers are great in grain bowls or reheated with roasted meats.
