Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- Cut in the butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Pour in buttermilk and mix until just combined.
- Fold in the chopped apple pie filling, brown sugar, cinnamon, and vanilla extract.
- Lightly flour a surface and roll out the dough to about 1/2-inch thickness.
- Cut into rounds using a biscuit cutter and place on the baking sheet.
- Brush the tops with a beaten egg for a golden finish.
